The most delicious, moist, and easy slow cooker chicken yet! Slow Cooker Salsa Chicken requires just a few ingredients: your favorite salsa, some spices, and the chicken! The perfect healthy, gluten-free, paleo weeknight dinner to please everyone!

I eat pretty minimal amounts of chicken Maybe once a week, twice at the most. Well last week I ate it twice for dinner two days in a row and would have eaten every day that week for dinner. I had bought a jar of Green Mountain Gringo's Mild Salsa at the grocery that weekend and wanted to take a stab at a new easy chicken dish. I normally would never use a pre-made salsa as they usually are to spicy, or loaded with sodium, but GMG's salsas are awesome! There is only 90mg of sodium in 2 tablespoons, zero sugars, and it really is a very mild salsa! So one morning, before school, I just threw the salsa and chicken in the crockpot and let it do its thing and prayed for the best. Well, everything worked out and when I came home the house smelled absolutely lovely, I could not wait to dig in 🙂

Instructions

  1. Place the chicken in the bottom of the slow cooker. Then add your salsa, water, and spices. Give it a mix.
  2. Place the cover on and cook on low for 6-7 hours (or until the chicken it cooked through).

That's it! It is so easy and so good 🙂 It is also one of those dishes that tastes exceptionally amazing the next day as well. Remember you can always adjust the seasonings and spices to your preference (those amounts are just guidelines!)

So tell me:

+ Do you call it a slow cooker or a crockpot? I call it both, it just depends on what pops in my head first. But I typed this post up using the word crockpot and then I looked and saw I had already set a precedent for the blog with my slow cooker balsamic chicken. So I didn't want to use the word crockpot, I wanted to keep it consistent!

+ Is your slow cooker really old or do you have one of the latest and greatest? Mine is really old and ancient. I think we got it from a friend who had like 10 and didn't need another. But it is old. I think the older the cooker the better though. We bought a new one just last year, but it doesn't seem to cook the same so we never use it! new technology just isn't the same 😉

      You actually don't have to cut anything at all! I wrote this recipe awhile ago, but I don't cut the breasts anymore.

      Buy a new one! I am sure you can find cheap ones on amazon or ebay!
      I never used to use the slow cooker, but I have been trying it out more and more.
      I bet you could also just throw the all the ingredients in a large baking dish and cook at 350 for 45 minutes!
