Not only is it easy and quick to prepare,ittasteslike a top chef has made it in your humble kitchen.

HOW TO MAKE Crispy Garlic Parmesan Salmon

    1. Make sure you position your oven rack to the middle of your oven before preheating it.
    2. For this recipe you can use a skin on or off side of salmon. We love skin on as the oils keep the salmon so juicy underneath while it bakes.
    3. I line my baking sheet with aluminium foil, but you can use parchment paper instead.
    4. Use fresh shredded parmesan in the crumb topping instead of the fine powdery parmesan found in plastic containers. It gives it a better flavour.
    5. You can use fresh chopped Dill instead of OR in addition to parsley!
    6. During testing we found fine breads crumbs came out crispier. You can also use Panko breadcrumbs if that’s what you have on hand.
    7. Try to coat your salmon evenly before baking. I also spray my crumb topping with a light coating of cooking oil (not non-stick oil) to help the topping brown better in the oven.

How long does it take to bake salmon in the oven?

About 12 to 15 minutes, depending on the size or thickness of your side of salmon. We prefer ours pink in the middle for juicy salmon. If you like your salmon well done, leave yours in for 15 minutes or longer. Just be careful not to dry it out too much.

What Wine Goes With This Salmon?

Ingredients

  • 2 pounds (1 kg) side wild salmon fillet (about 2 kg | 4 pounds)
  • 2/3 cup plain breadcrumbs
  • 2/3 cup grated parmesan cheese
  • 1/4 cup finely chopped parsley
  • 4 cloves garlic , minced
  • 1/3 cup melted butter
  • Salt and pepper
  • Lemon wedges , to serve

Instructions

  • Position a rack in the middle of the oven. Preheat oven to 400°F | 200°C. Line a baking tray / sheet with a large piece of foil. Place the salmon fillet, skin side down, on the baking sheet; set aside.

  • Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with 3/4 teaspoon salt and 1/3 teaspoon pepper (or to taste). Using your hands (it's easier than using a wooden spoon), mix the ingredients together until the breadcrumbs absorb the butter (about 40 seconds).

  • Pour the mixture over the salmon, pressing it into the top until the fillet is completely covered. Lightly spray salmon with cooking oil spray for a golden crumb.

  • Bake uncovered for 12-15 minutes (depending on the thickness of your fillet), until the crust is golden and the salmon is cooked and flakes easily with fork.

  • Serve with lemon wedges and a squeeze of lemon (optional). Team with a salad, steamed vegetables, rice or mashed potatoes.

    Great recipe! Took longer to cook than directed since my salmon cuts were thicker; about 30 minutes. Because the cuts were thicker, the amount of Parmesan crust was thicker. Thicker is not necessarily better. When we bit into the first bite there was way too much crust. We then had to slice and dice the salmon to mix the salmon with the crust. Not as pretty, but very tasty. The vote from the family it is a keeper.

      Huge hit at my house! I try to make salmon twice a week. I use the frozen salmon that’s individually wrapped so I cut this recipe in half. Used dill instead of parsley…perfect! I also saw someone mention lemon zest in the breading, I’ll have to try that next time!!

    My husband and I LOVED this recipe! This is the first time I’ve ever eaten Salmon (much less cooked it) so I was sceptical but I really enjoyed it. I used Ritz crackers instead of breadcrumbs (I used less butter also) and I used Dill instead of Parsley which I think really complemented the Salmon. I will definitely be making this recipe again!

    I am happily building a repertoire of “Karina” recipes that are achieving heirloom status, as these are definitely not “one time” meals in our home. Last night I had my way with this amazing treatment for Salmon. My only deviation involved cooking just for 2. I used 2 (8 oz.) center cut Salmon fillets and made half of the topping. This was divided between the 2 fillets. I topped the fillets earlier in the day and kept them at the ready in our fridge. Based on another salmon recipe I make frequently, I roasted in a 425° oven for 10 1/2 minutes. This dish was a stunner. The topping insulated the Salmon, keeping it incredibly moist, even though fully cooked. Every delicious bite evoked all that I love about Escargot.     I made this salmon yesterday and it was so so good. I used a little bit more Panko and Parmesan so it would cover the whole top and sides of the fillet.     We eat salmon all the time so looking for something different. I must say for a simple recipe we were impressed. We cooked wild coho salmon and used panko bread crumbs instead, which I think made a difference. We didn’t even squeeze lemon on it because we couldn’t stop eating it when it came out of the oven!     I’m interested in trying this. As an “infant” seafood lover, I’m finding I like things better very crispy. Would this recipe be able to be adjusted (suggestions for adjustments) to be made in an air fryer? I love using my air dryer because of how crispy and not greasy or oily it makes everything

    Made this tonight but substituted the parsley, which I don’t think adds much to fish, for fresh chopped dill and it was AMAZING. We love our salmon here on Vancouver Island and eat it often. It’s nice to have another way to serve it. Our previous favourite is with garlic, brown sugar, butter, cumin and chilli powder with sea salt and pepper to taste. Most children LOVE it this way because of the sweetness of the brown sugar but I’ll bet they’d love your recipe too because of the crunchy cheese and breadcrumbs on top! Thank you for sharing!

    This is seriously my favorite salmon recipe! Thank you so much for sharing it! I’ve made this at least 4 times now and it gets rave reviews every time. I like how forgiving it is, too. I’ve forgotten the lemon, salt, and pepper and it’s still delicious. I usually serve it with buttered basmati rice and steamed broccoli, but I’ll bet it would be delicious on a salad… hmmm I might have to try that next time!

Soak fish filets in bowl of cold water. In a deep skillet or deep fryer, melt and heat the shortening to 350 degrees F (175 degrees C).
